For the past decade an English family has been operating the B&B, where the snails have been served to their guests from all corners of the world. Even squeamish Britons and Americans have returned from a stay at Les Carmes as committed snail lovers. In the restaurants signature dish, the snails are served in ravioli, with parsley sauce and cracked roast garlic. The owners are the only registered English snail farmers in France, which has earned them some celebrity within the country.
